Lab analysis is an essential aspect of the winemaking process. In the Adelsheim winery lab, our winemakers taste and evaluate the young wines in fermenter, tank, and barrel, from harvest onward. Sugar, alcohol, volatile acidity, total acidity and pH are some of the analyses performed here, as well as fining and blending trials for wines nearing bottling.
