We're entering the gravity-flow fermentation room on the winery's upper level. The vineyard crews have worked hard to provide us with beautiful, hand-picked grapes, and our "hands-off" winemaking requires the gentlest possible handling at this stage of the winemaking process.

Just behind us, Pinot gris, Pinot blanc, Chardonnay, Auxerrois and Tocai grapes are dumped into the hopper of our white grape press, and are gently pressed as whole clusters prior to frementation.
Our Pinot noir and Syrah grapes are carefully sorted by hand and destemmed into temperature-controlled, open-top tanks. Then, following a pre-fermentation maceration to extract flavor and color, the partly crushed grapes are inoculated with cultured yeast. Combined with daily punching down of the grape skins (or 'cap'), slow cool fermation emphasizes the nuanced flavors and aromas of these red wines.
