We'll proceed downstairs to take a closer look at the fermenters. Here, after fermentation, young Pinot noir wines are transferred off the skins through a filter screen positioned in front of the tank's racking valve. The tank door is then opened, and the juice-saturated skins (occupying 3 to 4 vertical feet inside the fermenter) are hand-shovelled into plastic bins to be transferred to the Press Room.
